Metodo Famigliare Bianco (Pet-nat)
Procanico, Verdello, Malvasia, Drupeggio, Grechetto harvested at end of September. Spontaneous fermentation with 5 days skin contact. Aged in resin tank. Re-fermentation in bottle with added must from original harvest. No filtering or fining and no added sulfur.
Santa Madonna Bianco
Procanico, Verdello, Malvasia, Drupeggio, Grechetto harvested early October. Spontaneous fermentation with 6 days skin contact and lees stirring. Aged in stainless and fiberglass tanks. Bottled in May. No filtering or fining and no added sulfur.
Santa Madonna Aurantiaco Bianco
Procanico, Verdello, Malvasia, Drupeggio, Grechetto with 10 days skin maceration. Spontaneous fermentation without temperature control. Aged in fiberglass tanks. No filtering or fining and minimal sulfur additions (if necessary).
Rosso del Pozzo
60% Sangiovese and 40% Montepulciano harvested at the beginning of September. Spontaneous fermentation with 7 days skin contact. Aged in fiberglass. No filtering or fining and no added sulfur.
