A rigorous selection of Trebbiano, Malvasia and Grechetto with 20 days skin maceration. Spontaneous fermentation with no temperature control. Aged in small 54 liter glass demijohn. No filtering or fining.
Monaco "Rosso"
A wild blend of Aleatico, Sangioveto (a small berried, higher acidity clone of Sangiovese) and some Grenache (Gamay del Trasimeno). Spontaneous fermentation without temperature control. Aged in small 54L glass demijohn. No filtering or fining.
